There is one attraction in the direct vicinity of Launceston which is really worth visiting, and that is Cataract Gorge. A narrow natural channel cut through dolerite leads to a large basin with a small park and a café. You can reach everything on well-paved paths, and also cross the basin on a free-hanging chairlift. Actually, the basin and park area may not be to everyone's taste, but the walk through the gorge is really worth it.
